If you have a juicer on your farm, you can easily prepare natural apple juice and applesauce without sugar for the winter. Homemade juices without chemicals or preservatives are so healthy and tasty!

The principle of operation of a juice cooker is very simple: water boils in the lower pan, fruits or berries are treated with rising steam, under the influence of which the juice is released. The juice flows into a medium saucepan, and from it into the prepared container.

Apple juice in a juicer: a recipe at home

We will need ripe apples, approximately 6-7 kg. It is better to take apples for juice that are well-ripened, sweet, and juicy. Wash the fruits thoroughly.

Cut out the seed chamber of fruits cut into quarters (unless, of course, you plan to make puree from the leftover apples). Otherwise, the seeds can be left.

Pour into the bottom pan of the juicer hot water. There should be a lot of water. While preparing the juice, be careful not to let the water boil over.

Install a juice receiver on it with rubber hose to remove juice.

And finally, the top perforated pan, into which place the apples cut into thin slices. Finely chopped fruits will release juice faster and easier. Close it with a lid. If the apples are small, then it will be enough to cut them into four parts.

Place the juicer on the stove and prepare a pan into which the finished juice will be poured. When the water in the bottom pan boils, reduce the heat to medium. Opening the lid after half an hour, you will see that the apples have begun to darken and become softer.

Gently stir the apples every 20-25 minutes. This will speed up the separation of juice.

After 40-50 minutes, depending on the ripeness and size of the apples, apple juice will begin to form.

While the juice is released, continue collecting it. A full pan of apples left a small pile of “apple waste”. Use them to make applesauce.

Wash jars or bottles and their caps thoroughly using soda. Sterilize in a convenient way. Stir the juice in a saucepan and pour into bottles. Cover with lids.

Then you need to sterilize the juice in bottles. To do this, pour water into a suitable pan, place a napkin or small towel on the bottom and place the bottles in it. Close the pan with a lid and sterilize from the moment of boiling for 15-18 minutes.

Remove the bottles from the pan using a towel and screw the lids on tightly. Place the bottles in a jacket or blanket, wrap them up and leave until completely cool.

Make sugar-free puree from the leftovers. Transfer the apples from the juicer to another pan.

Rub through a metal sieve or immersion blender until homogenized.

Place the applesauce in a heavy-bottomed casserole dish or saucepan. If the apples are not sweet, you can add sugar if you wish.

Bring the product to a boil, then reduce the heat to low and simmer the puree for 10-15 minutes. In this case, the contents of the pan must be constantly stirred so as not to burn to the bottom.

Rinse with soda, sterilize and dry small jars. Place the boiling puree in them and quickly close the lids.

Place the jars next to the juice, cover them with a blanket and leave until cool.

Completely natural products - juice and puree, tasty and healthy, will fill you with vitamins and give you a good mood!

Juice cookers have been familiar to housewives since Soviet times. Their design has not changed at all. It is convenient to cook juice from apples, grapes, and pears in a juicer. In this recipe we will tell you how to prepare apple juice in a juicer for the winter, and from the remaining apples after squeezing the juice we will prepare apple jam.

The advantages of using a juicer compared to a juicer are undeniable:

  • The juice obtained in a juicer does not require additional boiling, which makes it much more vitamin-rich.
  • Once opened, the jars of juice obtained in the juicer can be stored in the refrigerator for a whole week. Whereas the juice obtained from the juicer should be consumed within 24 hours.
  • From the pulp, after evaporating the juice, you can get delicious purees, marmalades, confitures and other preparations.
  • Among the disadvantages of this method of obtaining juices, perhaps only the duration of the process can be noted.

How to prepare apple juice in a juicer for the winter

So, peel and seeds the apples. Cut into arbitrary pieces.

Pour water into the juicer.

After waiting for the water to boil, pour the apples into the top tier of the pan.

When the apples are steamed and soft, add sugar. Add sugar to taste depending on the acidity of the apples. In my case, 300 g of sugar were used per kilogram of peeled apples.

The juice first begins to drip, and then runs in a thin stream. We lower the hose coming from the juice cooker into a pre-sterilized jar. The jar must be dry.

After filling the jar with juice, screw it on with a dry, sterile lid. When the juice stops flowing, it means it’s time to prepare the second jar for puree.
The steam juicing process will leave you with sweet applesauce. It can also be closed for the winter and used for filling pies and pies.

In a dry jar we put hot puree from the upper tier of the juicer, which was formed from the stored apples. Screw on the dry lid.

After we have juiced and pureed this batch of apples, we add a new batch of apples. We repeat the whole process until we run out of apples. If the jar is not completely filled, and the apples no longer give juice, then add the next portion of apples and just wait, without covering the jar under any circumstances.
Prepared juice and puree are perfectly stored in an apartment. You can also make jam, marmalade and marshmallows from the resulting puree.

A juicer turns out to be much healthier and tastier than store-bought. Unlike a drink prepared using a juicer, here the juice is cleaner, without sediment, and the device does not require electricity and is quieter. And from the remaining fruit pomace you can then cook delicious jam. Let's find out with you how to prepare apple juice using a juicer.

Recipe for apple juice in a juicer

Ingredients:

  • sugar – 150 g;
  • apples – 1 kg.

Preparation

Wash the apples, first cut them into small slices 15 mm thick, and then chop each piece crosswise into halves. If you chop larger apples, they will heat up slowly in the juicer and the process of preparing the juice will take a long time. Pour water into the lower container of the juicer and heat it to a boil.

Then we place a second saucepan in it with a small hole in the middle to collect the juice and create a steam space. Insert a colander into this pan and pour chopped apples into it. The steam generated by cooking in the lower pan heats our fruit and softens it. At the same time, the fruits begin to secrete juice, which flows down a tube into a pan placed in advance.

If the apples are not heated enough, the juice flows out slowly and cools quickly. Therefore, be sure to ensure that the water boils well. After the apples have completely softened, we disassemble the juicer, pour the juice remaining in the second pan into a saucepan and pour it into pre-sterilized and hot jars.

If the apple juice has already cooled down, then first heat it to 85 degrees, add sugar and pour it. Next, roll up the lids of the jars and place them upside down on flat surface. Wrap, cool and store in a cool, dark place.

Apple and grape juice in a juicer

Ingredients:

  • grapes – 500 g;
  • apples – 1 kg;
  • sugar - to taste.

Preparation

To prepare apple juice in a juice cooker, carefully sort the bunches of grapes and remove the sluggish and spoiled berries. We thoroughly wash the bunches and, without tearing off the grapes, place them in the juicer container. Wash the apples, cut them into cubes and add them to the grapes. Add sugar to taste, place the bowl with grapes and apples on the juicer, cover with a lid and light the fire. After about an hour, open the tap and pour the apples into a pre-set enamel pan. Then carefully pour the hot drink into a clean jar, roll it up with a tin lid and put it away for the winter.

Apple-pumpkin juice in a juicer

Ingredients:

  • apples – 500 g;
  • pumpkin – 500 g;
  • sugar – 150 g.

Preparation

Wash the pumpkin and carefully cut off all the skin with a sharp knife. Remove all seeds and fibers, then grind the pulp and add sugar. Wash the apples, cut them into cubes and mix with the pumpkin mixture. Now put everything into a juicer and cook the apple juice for about 45 minutes. Then pour the finished hot drink into clean jars, pasteurize for 15 minutes at a temperature of 85 degrees and wrap it in a blanket. Store apple juice in a dark and cool place.

To start creating a juicer or juicer at home, let’s get acquainted with their structure and operating principle. All juicers, juice cookers and juice presses are designed for extracting juice from fruits and vegetables. Of course, the best juicer is an electric one with high power and naturally high productivity. But most devices are produced to produce only 1-2 glasses, then they quickly heat up and fail. To obtain juice from citrus fruits, cone-shaped manual juicers are used. They are made of glass, metal or plastic.

Apple juice through a juicer for the winter: recipe with photos

An unpeeled lemon or orange is cut in half and the half is placed on a cone. By turning the citrus in both directions, you get juice.

There are also screw and lever juicers and a juicer attachment for a meat grinder. Screw juicers operate on the principle of a press. The grated or crushed fruit mass is placed in a vessel and squeezed out, tightening the screw, using a screw press.

The operating principle of a lever juicer is based on the use of a press handle. The container is filled with fruit and the lid is closed with a press; the juice is released after pressing on the handle.

Juicer on a meat grinder - auger juicer. The meat grinder is attached to the table. Filling the container with berries, rotate the handle and get the juice flowing out through metal mesh, and the cake falls out through a special hole.

In addition to juicers, there are juice cookers. Juice cookers are good for extracting juice from soft berries, currants, blueberries, raspberries, and strawberries. They are a set of pans, usually made of aluminum. The lower pan is in the form of a truncated cone, the upper one is cylindrical with a central tube. The cylindrical pan contains a conical colander with a lid. Various fruits are placed in a colander, mainly raspberries, strawberries, blueberries, peeled apples and pears. Sometimes you can add sugar. The juice cooker is placed on the fire, and after some time, under the influence of steam, aromatic juice begins to be produced and flow from the tube. The juice is hot and therefore you can put prepared jars under the tube; when they are filled, immediately seal them with lids and seaming wrench.

You can make a juicer with your own hands. To do this, we use the principle of obtaining juice in a factory juicer. Take a large saucepan or enamel bucket, but make sure it has a lid. Place a plate, bottom up, or a wooden circle or board cut with a jigsaw. Then place a container with high sides on it. Pour enough water into the pan so that when boiling it does not fall into the container to collect the juice.

Use a piece of gauze in two layers or thin linen to tie around the edges of the pan, so that the bottom barely reaches the container for collecting juice. Place raspberries or blueberries in this cloth and cover the pan with a lid. Place the made juicer on the fire. When the water boils, the juice will begin to separate into the substituted container. The fire can be reduced. All the juice should separate in about an hour. After this, remove the bag of berries and squeeze out the contents. Pour hot juice into jars and seal.

How to use a juicer?

Delicious healthy juices, without preservatives, without additives - isn’t it a dream? And this dream can easily turn into reality thanks to the simplest invention - a juicer. The operating principle of the juicer is based on steam processing of products, which allows you to preserve the maximum of nutrients and at the same time obtain pasteurized juice, ready for twisting. And at the same time, no tedious preparations or preparations, since preparing juice in a juicer is very easy. And in order to use all the capabilities of this miracle unit, let’s take a closer look at how to use the juicer correctly.

How the juicer works

The juice cooker consists of several sections - a water container, a juice container equipped with a valve and tube, and a container with holes for food. Models differ in the volume and material of the containers, the design of the bottom, but the principle of operation of the juice cooker is the same. The water boils, and under the influence of steam, vegetables and fruits release their juice. The remaining pulp is also suitable for consumption or canning. The result is waste-free production and a supply of vitamins for the winter.

How to use a juicer correctly?

First of all, the unit must be prepared for operation. Before using the juicer for the first time, you must thoroughly wash the containers. The rubber tube for the juice cooker is processed in boiling water. Next, following the instructions, you should install and secure the parts and begin preparing the juice. Models and designs may vary, so in the future you should also follow the manufacturer's advice. And the following recommendations, relevant for all juice cookers, will help preserve the device for many years:

  • always monitor the amount of water and do not allow the bottom to burn;
  • when preparing stewed dishes (meat, fish, vegetables), you should not frequently lift the lid of the juicer;
  • there is no need to completely fill the water tank; as a rule, it is recommended to underfill about 15-20% of the liquid;
  • do not use abrasive or alkaline agents to clean containers, and do not remove carbon deposits with sharp objects;
  • do not forget to clean the valve and tube;
  • To remove scale in a water container, boil a solution of soda at the rate of 2 tsp for about 20 minutes. for 1 liter of water.

How to make juice in a juicer?

Before preparing juice in a juicer, you need to prepare food and juice containers. Vegetables, fruits or berries should be washed well, sorted, remove seeds and stems, peel if necessary, and cut into several slices. The juices in the juicer are quite sweet, but if desired, you can sprinkle the fruits and berries with sugar before processing. Vegetables can be lightly salted. It is recommended to pour the first bottle of juice obtained back into the food container, and re-sterilize the bottle itself. The finished juice should be immediately twisted and, after cooling, stored in a cool place. Uncurled juice can be stored in the refrigerator for about a week without losing its beneficial properties.

Housewives often ask how to cook apples in a juicer, should they be peeled, chopped, or cored? In order to ultimately obtain both juice and puree, the apples should be completely peeled and cored. If the presence of the peel is not of fundamental importance, then for juice it is enough to cut the apples into slices and remove the middle.

How to use a juicer to prepare other dishes?

The principle of operation of a juice cooker is similar to the operation of a double boiler, therefore, the device can be used for preparing tasty and healthy food. Steamed fish, meat, and vegetables turn out unusually tender and, most importantly, easy to prepare.

Prepare dishes in the same way as making juice in a juicer, only adding spices and salt first. But after cooking, you should wash all containers especially thoroughly so that the residual smell of fish, meat or spices does not subsequently spoil the juice.

Of course, before using the juicer, you should read the instructions. As a rule, manufacturers write about the features of the model and give recommendations that allow you to use the device most effectively.

Not many people know how to cook juice in a juicer, or why bother doing it at all. This device appeared in the ranks household appliances for quite a long time, but never achieved popularity among housewives. In most cases, this is explained by at least two factors.

Firstly, consumers simply do not know all the positive aspects associated with this option for processing fruits, berries and vegetables. Secondly, today many fruits are presented in a wide range and are available practically all year round. This makes it much easier for people to buy them and squeeze the juice mechanically, without wasting time on what they think is a troublesome process.

Why use a juicer to make juice?

The operating principle of a juicer is similar to a regular steamer. It consists of three parts, which are designed for pouring water, placing food and collecting the finished juice. If we compare the procedure for obtaining a drink using a juicer and a juicer, then many factors speak in favor of the first device:

  • Working with a juicer is easier and more comfortable. It does not make noise, does not splash the product, and its parts do not become clogged with pieces of pulp.
  • The final drink does not contain sediment, because... During the evaporation process, all particles of pulp are brought to the same state.
  • The finished product does not require additional sterilization. If necessary, it can be immediately rolled into jars. And if you want to store freshly squeezed juice for the winter, you need to boil it immediately after extraction.
  • The “raw” composition oxidizes very quickly, so you need to either drink it right away or spend time on additional processing. The juice obtained as a result of using a juicer can be stored much longer without negative consequences for its taste and physical properties.
  • Despite the fact that it takes more time to prepare juice in a juicer than with mechanical processing of components, this process does not require constant presence. There is no need to add products during manipulation; they only need to be initially loaded into the desired compartment.

Tip: The pulp remaining after preparing the juice does not need to be thrown away. You can cook from it delicious jam or marmalade. In the juicer itself, healthy jelly is prepared from the leftover product.

  • The juice obtained by steaming usually does not even need any added sugar. It is already sweet and aromatic.
  • The juicer does not get dirty as intensely as a juicer. Washing it after use is much easier.
  • If necessary, the device can be used as a regular steamer for steaming the necessary components.
  • The finished product is distinguished by the maximum range of useful components, regardless of what is included in its composition.

Of course, to prepare a small amount of juice every day, it is more convenient and efficient to use a juicer. But if you plan to prepare large quantities of the drink for the winter, then you can’t think of anything better than a juicer.

How to organize the process according to all the rules?

The procedure for preparing juice begins with reading the instructions that come with each machine. If this is not done, you may accidentally exceed the volume of water or food, or incorrectly set timers, if any. In addition, it is important to assemble the device correctly. It usually consists of three parts, but variations are possible.

  1. Wash the selected fruits, clean them, remove the seeds, cut out all damaged parts. It is better not to remove the skins, because they contain many useful components. Cut large specimens into pieces. We place all the blanks in the appropriate section of the device.
  2. When using vegetables, you can sprinkle the semi-finished product with a small amount of salt. If fruits or berries are added, sugar is added to taste. On average, 1 kg of strawberries or cherries requires no more than 100 g of sugar. For plums, raspberries, apples and pears, use a couple of tablespoons more.
  3. We fill the lower compartment of the device with water, the volume depends on the dimensions of the device. Do not fill the container completely; after boiling, it will begin to pour out. Next, close the lid, clamp the device hose and start the device. As soon as the temperature exceeds 70ºC, liquid will begin to accumulate in the receiver, the level of which must be monitored. After approximately 30-60 minutes, the tank will be filled only if the components are not dry and too dense.
  4. Then we take sterile, still warm jars, and sequentially fill them from the reservoir, placing the hose and unblocking it.
